Our family is on a path to living as sustainably as possible. Part of this plan requires that we eat locally and provide as much food as we can ourselves. My wife has very big plans for canning a great deal of the food that we will eating in the coming year. She has invested a great deal of money and time learning everything that she can about canning. If you are not familiar with the process I must let you know that pressure canners, water bath canners, and canning jars are not cheap. Unless you can get tons of jars for free you can expect to shell out a lot of money for them. To have enough jars to put away food for a family of four means you need hundreds of jars. She has been buying them new and used for several months. Tomorrow she is going to put all of this planning to the test. We picked up a half bushel of peaches today and the plan is to get them canned tomorrow. I really, really hope it works.
