Monster omlette.
Posted by The Inspector on February 26th, 2011 filed in UncategorizedWe have about two dozen eggs sitting in our refrigerator. These are eggs produced from our own chickens in our own backyard. We only have three chickens and only two of them are laying eggs. They collectively will lay the perfect amount of eggs for our family of four. Because they only recently started laying their eggs are a bit on the small side. That means to make eggs for the family we need to save them up for a while. To make a decent sized omlette or “monster omlette” as my son calls them requires 8-10 eggs. We could probably use a full dozen but I hate to waste them. These eggs are the most beautiful things you have ever seen or tasted. Our chickens lay deep brown eggs with vibrant orange yolks. I wasn’t very sure about getting chickens at first but now that they lay eggs I am convinced that this is a worthwhile family activity. My stomach is even more convinced than I am.
