Storing food.

When I talk about storing food I do not mean buying prepared food at the grocery store and sticking it on your shelves at home. What I am talking about is using methods of preserving like canning, drying, and using a root cellar. We have a closet in our basement that we would like to convert to a root cellar of sorts but don’t really know how. We have cleaned it out and are trying to decide the best method to go about stabilizing the temperature in it. It would be awesome if it had a window to the outside but it does not. Without an air exchange I am not sure if we could keep the temperature low and humid enough to properly store fruits and vegetables.
