Making jerky…
Posted by The Inspector on May 21st, 2011 filed in UncategorizedAbout two weeks ago my wife bought a new dehydrator. We had a sort of crummy one that we got from a thrift store. It worked okay for some things but had no temperature control system. Given that our garden often produces food at various time we find ourselves with produce that we can’t use at that time and isn’t really enough to can. Having a decent dehydrator means that we can dry small batches of produce as they come in. My son has been itching to try making jerky in the dehydrator. Tonight we are embarking on that journey using a jerky gun and grass fed ground beef purchased from a local farmer. My son is beside himself with excitement about this process. Having never made jerky before we are going to go with the USDA safe food guidelines and cook our jerky first given that our children will be consuming it. I will let you know how it turns out. It should prove interesting.
