Just peachy…
Posted by The Inspector on August 19th, 2011 filed in UncategorizedYou likely don’t know this about me but I am into canning. Actually my wife is into canning and drags me along for the ride. It is a great way to preserve food you grow yourself or buy locally. This week I was off for a couple of days and we went on a canning binge. We put away a bushel of apples and peaches. These were preserved as apple sauce and sliced peaches. We also put away 5 dozen ears of corn and a bushel of tomatoes. Somewhere there were 45 pounds of potatoes and that made it into jars as well. Late one night I recall canning chicken stew and chicken soup. I have a vague recollection of canning carrots, sauerkraut, and onion marmalade. Like I said it was a hectic week of canning. Our pantry shelves are now completely full and we still have plans to process another 300 jars of food. At least I know the winter will be full of tasty or “peachy” foods to savor.
